INGREDIENTS FOR 4
– anchovies
– potatoes
– sweet pepper from Altino
– tomatoes
– eggplant
– extra virgin olive oil
– parsley
– garlic
– pepper
PREPARATION
Grease a baking tray, add a layer of sliced potatoes, season with salt, sweet pepper from Altino, chopped parsley, garlic and pepper as desired.
Make a layer of anchovies (beheaded and boneless) and again with potato. Finish with a few pieces of tomato.
Bake in preheated oven until golden brown.
SIDE DISH
Take the eggplant, wash, dry, slice and grill it, season with salt and oil, serve with baked anchovies.
