Wild boar meatballs

RECIPE BY PELLEGRINI MARIA FROM WINERY COLTIVATORI DIRETTI – TOLLO

INGREDIENTS FOR 4
– 3,3 lb. of wild boar
– 2 eggs
– 3,53 oz. of parmesan cheese
– 3,53 oz. of bread
– 2 medium potatoes
– 1 yellow pepper
– black olives
– tomato sauce
– parsley, garlic, salt
– seed oil

PREPARATION
Put in a bowl the minced beef, the bread previously soaked in water or milk, garlic and parsley, salt, pepper. Add boiled and mashed. Mix well with your hands. Formed large balls like considering a walnut size.
Put them in a pan with a little oil and fry well.
In a frying pan add the tomato sauce, the coreless garlic and chopped parsley. Cook for 10 minutes. Add the meatballs and simmer for 15 minutes. When cooked, add few leaves of fresh basil.
Serve hot.
